
YaYa’s Marbled Brownies
Ingredients
- 6 tablespoons margarine
- 1 cup sugar divided
- 1 large egg
- 2 large egg whites divided
- 1/2 cup all-purpose flour
- 1/4 cup cocoa
- 1 8 oz package cream cheese
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350°F.
- Coat a 9-inch square pan with non-stick spray and dust with flour.
- In a large mixing bowl, beat margarine and 3/4 cup sugar until creamy.
- Add egg and 1 egg white, blending well.
- Combine flour and cocoa, then gradually add to the margarine mixture.
- Add vanilla.
- In another bowl, combine cream cheese and remaining 1/4 cup sugar until creamy, then add the remaining egg white and beat until well mixed.
- Pour 2/3 of the chocolate batter into the bottom of the pan.
- Spread cream cheese batter over the chocolate batter, then use a table knife to swirl the remaining chocolate batter into the cream cheese layer.
- Bake for 25 minutes.
- Let cool on a wire rack before cutting.

- Make sure the margarine is softened but not melted for the best creaming texture.
- Use room temperature cream cheese for easy mixing with no lumps.
- Swirl gently—overmixing will blend the colors too much and take away from that pretty marbled effect.
- These store well in the fridge, but I like to serve them at room temperature so the cream cheese layer is soft.

- If you want to add a little more flair to these brownies, fold in a handful of mini chocolate chips or even chopped walnuts into the chocolate batter.
- For a festive version, swirl in a tablespoon of raspberry jam with the cream cheese layer.
- If you love almond flavor, substitute the vanilla for almond extract—just use a little less since it’s more potent.
