Angel Food Loaf

Yaya's Angels Food Loaf is a light, airy dessert that’s as heavenly as its name. Perfectly sweetened and versatile, it pairs beautifully with fresh berries, whipped cream, or a drizzle of lemon glaze. This family favorite has been passed down from my mama Shirley and brings a touch of nostalgia and joy to every slice.

Ingredients

  • 1/2 cup flour
  • 3/4 cup sugar
  • 3/4 cup 5 egg whites
  • 1/2 tsp salt
  • 1/2 tsp cream of tartar
  • 1/2 tsp vanilla
  • 1/4 tsp almond extract
  • 1/4 cup sugar additional

Instructions

  • Sift flour and 3/4 cup sugar together.
  • Beat egg whites and salt.
  • Sprinkle in cream of tartar and beat egg whites until they stand in peaks.
  • Sprinkle remaining sugar over egg whites a little at a time.
  • Beat in flavoring.
  • Sift about half of flour mixture, sift again and fold in.
  • Add last of flour mixture and fold in.
  • Turn into ungreased 10x5x3 inch loaf pan.
  • Bake in oven at 375°F for 25 minutes.

  • Room Temperature Eggs: Bring your egg whites to room temperature before whipping them—they’ll hold more air and create a fluffier batter.
  • Use a Clean Bowl: Make sure your mixing bowl and beaters are absolutely clean and grease-free. Even a speck of grease can prevent your egg whites from whipping properly.
  • Fold Gently: When incorporating the flour and sugar mixture into the egg whites, use a gentle folding motion to keep the batter airy.
  • Cool Upside Down: Let the loaf cool upside down to maintain its structure and prevent sinking.

  • Citrus Twist: Add a teaspoon of grated lemon or orange zest to the batter for a zesty kick.
  • Chocolate Swirl: Gently fold in a tablespoon of cocoa powder for a marbled effect.
  • Almond Lovers: Substitute the vanilla extract with almond extract for a nutty flavor.
  • Holiday Touch: Sprinkle a little cinnamon and nutmeg into the batter for a festive twist.
