Apple-Onion Beef Pot Roast

This slow-cooked Apple-Onion Beef Pot Roast is tender and flavorful with hints of sweet apple, savory onion, and a rich brown sauce. Perfect for cozy meals and makes great leftovers, too.

YaYa’s Apple-Onion Beef Pot Roast

Ingredients

  • 1 boneless beef sirloin tip roast 3 pounds, cut in half
  • 1 cup water
  • 1 t. seasoned salt
  • 1/2 t. reduced-sodium soy sauce
  • 1/2 t. Worcestershire sauce
  • 1/4 t. garlic powder
  • 1 large tart apple quartered
  • 1 large onion sliced
  • 2 T. cornstarch
  • 2 T. cold water
  • 1/8 t. browning sauce

Instructions

  • In a large nonstick skillet coated with nonstick cooking spray, brown roast on all sides.
  • Transfer to a 5-qt. slow cooker.
  • Add water to skillet, stirring to loosen any browned bits; pour over roast.
  • Sprinkle with seasoned salt, soy sauce, Worcestershire sauce and garlic powder.
  • Top with apple and onion.
  • Cover and cook on low for 5 to 6 hours or until meat is tender.
  • Remove roast and onion; let stand for 15 minutes before slicing.
  • Strain cooking liquid into saucepan, discarding apple.
  • Bring liquid to a boil; cook until reduced to 2 cups, about 15 minutes.
  • Combine cornstarch and cold water until smooth; stir in browning sauce.
  • Stir into cooking liquid. Bring to a boil; cook and stir 2 minutes or until thickened.
  • Serve over beef and onion.

Yaya’s Tips for Success

  • For extra tenderness, make sure to give that roast enough time in the slow cooker.
  • If you’ve got the time, you can even cook it a little longer on low to really break it down.
  • Be sure to slice the roast against the grain to keep it tender.
  • And when reducing the sauce, keep an eye on it so it doesn’t cook down too far—you want enough to pour over every bite.

Yaya’s Customization Ideas

  • If you want a little more sweetness, try using a sweeter apple like Fuji or Gala.
  • You can also add a few baby carrots around the roast for a heartier meal.
  • If you like a stronger onion flavor, use two onions instead of one.
  • And for those watching sodium, just cut the seasoned salt in half and skip the browning sauce—the flavor will still be delicious.
