
YaYa’s Broccoli and Rice Casserole
Ingredients
- 1 pkg. chopped broccoli
- 2 cups cooked rice
- 1/2 cup shredded cheddar
- 2/3 cup milk
- 1 can Cream of Chicken Soup
- 1/4 cup diced onion
- 1 stick butter
Instructions
- Drain and squeeze dry broccoli.
- Sauté broccoli and onion in butter.
- Mix all ingredients together and place in a casserole dish.
- Bake at 350°F for 30 minutes.
- Sprinkle cheese on top and return to the oven for another 5 minutes or until the cheese is melted.

This casserole is as dependable as it is delicious, but a few little tricks will ensure yours turns out just right every time:
- Be sure to really squeeze out the water from the broccoli if you’re using frozen. Extra moisture can make your casserole runny.
- Use freshly cooked rice that isn’t overly wet or mushy. Day-old rice works just fine too!
- Stir everything well before baking so all the ingredients are evenly coated and seasoned.
- You can lightly grease your casserole dish with butter or spray to make cleanup easier.
