YaYa’s Cowboy Caviar Salsa

Ingredients

  • 1 can tomatoes w/green chilis
  • 1 can corn
  • 1 small onion
  • 1 can black beans*
  • 1 sweet pepper green, red, or yellow
  • 1/2 – 3/4 cup Zesty Italian Dressing

Instructions

  • Drain and rinse black beans & corn.
  • Dice onion & pepper.
  • Mix all ingredients together.
  • Chill for at least 4 hours.
  • Serve with tortillas or corn chips.

There’s something so cheerful about a big bowl of Cowboy Caviar sitting on the table. It’s colorful, crunchy, and packed full of bold flavor that just begs for a chip to dive into it. Whether you’re bringing it to a summer cookout, laying it out for game day, or just need a quick snack to scoop up while supper simmers, this little mix is as easy as it gets. Canned veggies make it super simple, but you’d never know it once everything’s all tossed together and chillin’ in that zesty Italian dressing. It gets better the longer it sits, so don’t skip the chill time if you can help it!

To make sure your Cowboy Caviar is bright and flavorful every time, follow a few of my simple tips.

  • First, drain and rinse those beans and corn real well, so you don’t end up with a watery mess.
  • Use a sweet onion for a milder bite, or go with red if you want some extra color. I prefer using a red or yellow bell pepper because they’re a little sweeter, but any kind works just fine.
  • When it comes to the dressing, start with a half cup and add more to taste—some like it lightly dressed, others like it bold and tangy.
  • Let it chill in the fridge at least 4 hours to soak in all that goodness. Overnight is even better!

Yaya’s Customization Ideas

There are so many ways to make this your own:

  • You can swap out the black beans for black-eyed peas, or even use both.
  • Want a little kick? Add in a minced jalapeño or a splash of hot sauce. F
  • resh lime juice adds a citrusy zing that brightens the whole bowl, and chopped cilantro gives it that fresh pop if you enjoy the flavor.
  • Sometimes I’ll even throw in diced avocado right before serving—just be sure to toss it gently so it doesn’t get mushy.
  • And if you’ve got picky eaters, leave out the onions and let folks sprinkle some on their own plate.
