Ingredients

  • 1 large bag frozen hash browns
  • 2 cans potato soup
  • 8 oz. sour cream
  • 8 oz. grated sharp cheddar cheese
  • 1/2 teaspoon garlic salt
  • 1/2 cup Parmesan cheese
  • Butter for dotting the top

Instructions

  • Preheat oven to 350°F. Grease a 13x9x2-inch casserole dish.
  • In a large bowl, combine hash browns, potato soup, sour cream, cheddar cheese, and garlic salt.
  • Pour mixture into the prepared baking dish and spread evenly.
  • Dot the top with small pieces of butter.
  • Sprinkle Parmesan cheese over the top.
  • Bake uncovered for 1 hour, or until golden and bubbly.
  • Serve warm and enjoy!

This casserole is best when baked uncovered so the top develops a golden crust. Be sure to thaw the hash browns slightly before mixing so they blend easily with the soup and sour cream.

  • Grease your pan well to prevent sticking.
  • Use sharp cheddar for the richest flavor.
  • If making ahead, cover and refrigerate the casserole up to 24 hours before baking.

Yaya’s Customization Ideas

This casserole is so versatile that you can easily adapt it to suit your family’s taste.

  • For a heartier version, stir in cooked diced ham, ground sausage, or shredded rotisserie chicken.
  • Add a pinch of paprika or onion powder for an extra layer of flavor.
  • If you want a little crunch, sprinkle crushed buttery crackers or cornflakes on top along with the Parmesan.

For another comforting side, try pairing this dish with Yaya’s BBQ Sauce for grilled chicken or ribs, or serve alongside Orzo Pasta Salad for a potluck spread.
