
YaYa’s Onion Soup
Ingredients
- 4 large onions
- 2 T. butter
- 1 T. flour
- 6 cups beef broth or 6 beef bouillon and water
- Salt and pepper to taste
- 6 slices French bread
- 3/4 cup Swiss cheese grated
- 1/4 cup Parmesan cheese grated
Instructions
- Saute onion in hot butter until softened and lightly brown
- Stir in flour and simmer 20 minutes. (or cook in crock pot all day on medium)
- Ladle soup into oven proof bowls.
- Place a round of bread over soup and sprinkle with cheeses.
- Place bowls on cookie sheet and brown cheese under preheated broiler for 3 minutes.

Make sure you slice the onions evenly so they cook down at the same rate.
A good caramelization makes all the difference in flavor.
Use a wooden spoon to stir often and scrape the pot’s bottom so the sugars don’t burn.
If you don’t have oven-safe bowls, you can toast the bread separately with cheese and then float it on top when serving.

This recipe’s a good base for dressing up a little or keeping humble. Here’s how I’ve played with it through the years:
- Swap out the Swiss for Gruyère or provolone for a different cheesy finish
- Use homemade bone broth if you have it—it adds richness
- Add a splash of dry white wine after you sauté the onions for an extra depth of flavor
- If you like your soup thicker, add another tablespoon of flour when cooking the onions
