Ingredients

  • 2 T. peanut oil
  • 1 lb. roasted shelled peanuts
  • 1 T. grated Parmesan cheese
  • 1 t. garlic salt

Instructions

  • Heat peanut oil in a shallow baking pan in a 350-degree oven for about 5 minutes.
  • Remove from oven, add peanuts, and stir until coated with the hot oil.
  • Return to oven for about 5 minutes.
  • Remove from oven, sprinkle with Parmesan cheese and garlic salt, and stir to coat with cheese.

Yaya’s Tips for Success

Use good quality roasted peanuts for the best flavor. Dry roasted or lightly salted works just fine.

Stir quickly and thoroughly after removing from the oven the second time so the cheese sticks while everything is still warm.

If your Parmesan is extra fine, it’ll cling better to the peanuts and give you more even flavor in every bite.

Try using smoked paprika or cayenne pepper if you want a spicy version.

Swap out the Parmesan for finely grated Romano cheese for a slightly sharper flavor.

Add a sprinkle of crushed rosemary or thyme for a more herb-forward twist.

For party flair, serve them in mini paper cones or small mason jars for guests
