Yaya’s Tips for Success
To make this Sally Lunn Coffee Cake turn out soft and tender, be sure to sift your dry ingredients thoroughly before mixing. Creaming the shortening and sugar until light and fluffy is also key to achieving a nice texture. When adding the eggs, incorporate them one at a time, ensuring each is mixed in well before adding the next. Finally, be gentle when alternating the dry ingredients with the milk to avoid overmixing, which can make the cake tough.
When sprinkling the brown sugar and melted butter on top, be generous! It creates a lovely caramelized layer that makes this coffee cake absolutely irresistible.
Yaya’s Customization Ideas
This cake is so versatile! You can switch it up with a few tweaks depending on what you’re craving:

- Mix in chopped nuts like pecans or walnuts for a little crunch.
- Replace the brown sugar topping with a cinnamon-sugar crumble for a streusel-like finish.
Want something more indulgent? Drizzle a vanilla glaze over the top once it’s cooled.
