Ingredients

  • 1 pound fresh mushrooms halved
  • 2 T. olive oil or canola oil
  • 1/2 cup water divided
  • 1 T. soy sauce
  • 1/4 t. sugar
  • 2 t. cornstarch

Instructions

  • In a nonstick skillet, stir-fry mushrooms in oil for 2 minutes.
  • Combine 1/4 cup water, soy sauce, and sugar; pour over mushrooms and toss to coat.
  • Cook and stir for 1 to 2 minutes.
  • Combine cornstarch and remaining water until smooth; gradually stir into mushrooms.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.

Yaya’s Tips for Success

  • Make sure your skillet is hot before adding the mushrooms so they sauté quickly without becoming soggy.
  • Do not overcrowd the pan or the mushrooms will steam instead of browning.
  • Use fresh mushrooms, not canned, for the best texture.
  • If using larger mushrooms like portobello, slice them instead of halving.

This recipe can go so many different ways depending on what you’re in the mood for.

  • You can add a pinch of garlic powder or minced fresh garlic to the skillet for an extra depth of flavor.
  • A splash of rice vinegar or a few red pepper flakes can add brightness or heat if that’s your style.
