Yaya’s Tips for Success
- Grate the squash finely and squeeze out excess moisture to avoid soggy fritters.
- Use a mix of yellow squash and zucchini for added color and flavor.
- Don’t overcrowd the skillet—cook in batches for even browning.
- Serve them immediately for the crispiest texture.
Yaya’s Customization Ideas
- Add a sprinkle of parmesan or cheddar cheese to the batter for extra savory flavor.
- Mix in herbs like fresh dill, parsley, or chives to brighten up the taste.
- For a spicy kick, toss in a pinch of red pepper flakes or a dash of hot sauce.
- Make them gluten-free by substituting regular flour with almond or rice flour.
