
YaYa’s Stuffed Mushrooms
Ingredients
- 8 oz fresh mushrooms
- 1 T. butter or margarine
- 2 T. chopped green onion
- 2 T. dry unseasoned bread crumbs
- 2 T. dairy sour cream
- Dash salt and pepper
Instructions
- Remove stems from mushrooms. Set caps aside; finely chop stems.
- In a 1-quart casserole or small bowl, combine chopped stems, butter, and green onion.
- Microwave on high for 1 to 1-1/2 minutes or until tender.
- Stir in remaining ingredients except mushroom caps.
- Spoon filling into mushroom caps.
- Microwave on high for 2 to 3 minutes or until hot.
Notes
Walnut-Stuffed Mushrooms: Follow the recipe above, adding 1/3 cup walnuts and a dash of dried thyme leaves with the chopped stems. Cheese-Stuffed Mushrooms: Use the recipe above, substituting 2 T. shredded cheese for the sour cream These can also be cooked in the oven under your broiler until crispy
