Tomato Basil Rice

Tomato Basil Rice is a fresh and easy side dish made with brown rice, ripe tomatoes, fragrant basil, and a splash of balsamic vinegar. It’s delicious warm or chilled and perfect for pairing with grilled meats or seafood.

Ingredients

  • 2 3-1/2 oz bags boil-in-bag brown rice
  • 2 cup coarsely chopped tomatoes
  • 3 to 4 T. coarsely chopped fresh basil
  • 1 T. balsamic vinegar
  • 1/2 t. salt

Instructions

  • Prepare rice according to package directions omitting salt and fat.
  • Combine rice and remaining ingredients in a medium bowl, tossing gently.
  • Serve immediately or cover and chill.

Yaya’s Tips for Success

  • Use the freshest basil you can get your hands on. That fresh herb flavor really makes this dish shine.
  • If your tomatoes are a little juicy, you can gently squeeze out some of the liquid before adding them in so your rice doesn’t get too soggy.
  • I also like to taste and adjust the vinegar or salt just before serving—especially if it’s been chilled.

Yaya’s Customization Ideas

  • If you want to bulk it up into a main dish, try adding a can of rinsed white beans or chickpeas for protein.
  • A sprinkle of feta or shaved parmesan can add a little richness too.
  • For a different flavor twist, swap the balsamic vinegar with a splash of lemon juice and a drizzle of olive oil.
  • You can even toss in a few chopped cucumbers for an extra crunch.
