YaYa’s Tomato Basil Rice
Ingredients
- 2 3-1/2 oz bags boil-in-bag brown rice
- 2 cup coarsely chopped tomatoes
- 3 to 4 T. coarsely chopped fresh basil
- 1 T. balsamic vinegar
- 1/2 t. salt
Instructions
- Prepare rice according to package directions omitting salt and fat.
- Combine rice and remaining ingredients in a medium bowl, tossing gently.
- Serve immediately or cover and chill.
Yaya’s Tips for Success
- Use the freshest basil you can get your hands on. That fresh herb flavor really makes this dish shine.
- If your tomatoes are a little juicy, you can gently squeeze out some of the liquid before adding them in so your rice doesn’t get too soggy.
- I also like to taste and adjust the vinegar or salt just before serving—especially if it’s been chilled.
Yaya’s Customization Ideas
- If you want to bulk it up into a main dish, try adding a can of rinsed white beans or chickpeas for protein.
- A sprinkle of feta or shaved parmesan can add a little richness too.
- For a different flavor twist, swap the balsamic vinegar with a splash of lemon juice and a drizzle of olive oil.
- You can even toss in a few chopped cucumbers for an extra crunch.
