- 1 lb pinto beans rinsed and picked
- 1 small onion diced
- 4 cups low-sodium chicken broth
- 1½ cups water
- 1¼ tsp garlic powder
- 1¼ tsp kosher sea salt
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- ¼ tsp ground black pepper
- ⅛ tsp cayenne pepper
Instructions
- Set Instant Pot to SAUTE mode.
- Add bacon and cook 3 minutes.
- Add onion and cook 2 minutes.
- Pour in chicken broth and water.
- Stir in garlic powder, salt, chili powder, cumin, paprika, black pepper, cayenne, and pinto beans.
- Lock lid and set Instant Pot to MANUAL mode, high pressure, for 45 minutes.
- Let pressure release naturally (about 15–20 minutes).
- Open lid, stir well, and serve hot.
