Ingredients

  • 2 strips uncooked bacon chopped
  • 1 lb pinto beans rinsed and picked
  • 1 small onion diced
  • 4 cups low-sodium chicken broth
  • cups water
  • tsp garlic powder
  • tsp kosher sea salt
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ¼ tsp ground black pepper
  • tsp cayenne pepper

Instructions

  • Set Instant Pot to SAUTE mode.
  • Add bacon and cook 3 minutes.
  • Add onion and cook 2 minutes.
  • Pour in chicken broth and water.
  • Stir in garlic powder, salt, chili powder, cumin, paprika, black pepper, cayenne, and pinto beans.
  • Lock lid and set Instant Pot to MANUAL mode, high pressure, for 45 minutes.
  • Let pressure release naturally (about 15–20 minutes).
  • Open lid, stir well, and serve hot.
