- 1 lb Ground Beef
- 2 packages Ramen Noodles discard seasoning packs
- 2 1/2 cups water
- 1 bag frozen Stir Fry vegetables 12 oz or larger
- 1 Onion diced
- Sesame or Olive Oil
Sauce
- Sweet Thai Chili Sauce approximately 1/2 cup
- 2-3 tablespoons Soy Sauce
- 1 tablespoon Brown Sugar
- 1/2 tablespoon Siracha
- 1/4 teaspoon salt I use Kosher
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
Instructions
- Whisk together all the sauce ingredients until combined. Set aside.
- Heat oil in a large deep nonstick skillet over medium-high heat.
- Once hot, add the ground beef and cook, breaking up the beef into small pieces, until no pink remains. Drain off the grease. Transfer meat to a bowl and keep warm.
- Add frozen vegetables and diced onion, cooking until tender – about 3-5 minutes, transfer to meat bowl.
- Add water to the skillet and bring to a boil. Add ramen noodles and cook until tender, 3-4 minutes. Drain off any excess water.
- Reduce heat to medium and return cooked ground beef and vegetables to the skillet with the noodles.
- Pour in the sauce and cook, stirring to coat and heat through, about 2 minutes.
- Serve with a topping of Cilantro or Scallions (optional)
