Ingredients

  • 3 broiling chickens split for broiling
  • cup butter
  • ¼ cup onion minced
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • 1 tablespoon table sauce like Worcestershire or similar
  • ¼ cup hot water
  • ¼ teaspoon pepper

Instructions

  • Melt the butter in a saucepan. Add the minced onion and sauté until tender and fragrant.
  • Stir in salt, lemon juice, table sauce, hot water, and pepper. Heat until the mixture is well blended. Keep warm for basting.
  • Prepare the split chickens for broiling, placing them skin side down on the broiler rack.
  • Broil according to standard directions, turning the chicken every 5 minutes, basting each time with the warm barbecue sauce.
  • Continue broiling until the chicken is cooked through and beautifully browned, about 40–45 minutes total.
