½head cauliflowergrated
1cupdry bread crumbs
3tablespoonsbutter
13ozromaine lettuce9–10 cups bite-size pieces
1cupmayonnaise
2tablespoonsgrated Parmesan cheese
1tablespoonfresh lemon juice
1small clove garlicmashed
Salt and pepper to taste
Instructions
In a small skillet, brown bread crumbs in melted butter until golden. Set aside to cool.
Tear romaine into bite-size pieces and place in a large salad bowl.
In a separate bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, and mashed garlic. Season with salt and pepper.
Pour dressing over the lettuce and toss well to coat.
