- 1½ cups all-purpose flour
- 1 cup quick-cooking oatmeal
- ¼ cup brown sugar
- 1 tablespoon baking powder
- ½ teaspoon salt optional
- ½ teaspoon cinnamon
- 1 cup skim milk
- 1 beaten egg
- 3 tablespoons vegetable oil
- 1 cup blueberries
Preheat oven to 425°F. Spray a 12-cup muffin tin with cooking spray or line with paper baking cups.
In a large bowl, combine flour, oatmeal, brown sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk together milk, egg, and oil.
Pour the wet ingredients into the dry mixture and stir just until moistened. Do not overmix.
Gently fold in blueberries.
Fill muffin cups about ⅔ full.
Bake 25 to 30 minutes, or until tops are golden brown.
Cool slightly before serving. Makes 12 muffins.
